Real proper custard :)!!

Today i thought i would go into the world of a perfectly creamy custard oozing off the back of a wooden spoon.my custard recipe is for the real proper custard you would find in restraunts full of rich cream and free range egg yolks!! You will need: 570ml full fat milk 55ml of single cream 1 vanilla pod ( these are fantastic full of the rich vanilla flavour) 4 egg yolks (free range) 30g caster sugar 20g cornflour Method: Bring the milk,cream and vanilla pod to a simmering point over a low heat! Do not boil this mixture as you will burn the cream and end up with an extremely botte tasting custard! Remove the vanilla pod now and dry if you wish and add to a bag of caster sugar to make vanilla sugar. Whisk the egg yolks, sugar and cornflour in a medium mixing bowl until a smooth paste is formed. Now begin to carefully pour thw milk and cream mix onto the eggs and sugar and continue whisking until a smooth creamy consistency is achieved. Now pour into a warmed serving jug and serve immediately. If you wish to serve it later on cover with cling film and pkace over a pot of very gently simmering water. I must say this is a very delectable dessert on its own or with a warmed through steamed pudding!!:) thanks i hope you enjoy. R.:)!
