Gas Mark : Degrees C : Description
1/4 : 110 : very cool, very slow.
1/2 : 130 : –
1 : 140 : cool.
2 : 150 : –
3 : 170 : very moderate.
4 : 180 : moderate.
5 : 190 : –
6 : 200 : moderately hot.
7 : 220 : hot.
8 : 230 : –
9 : 240 : very hot.
* note that if using a fan assisted oven, then lower then temperature by 20 degrees.

Abbreviations:
Tsp = 1 teaspoon.
Tbsp = 1 tablespoon.
g = grams.
kg = kilograms.
1/2 = half.
1/4 = quarter.
3/4 = 3 quarters.
oz. = ounce.
pt = pint.
fl. oz. = fluid ounce.
a glass = approx 200ml.
ml = millilitre.
l = litre.
a pinch. = as much as you can pick up between your thumb and finger.
a drop. = literally a drop.
*PS. I don’t ever do cups, and never will I find them too confusing, digital scales are the way for me or by eye… eventually..
General Things:
All eggs are large organic.
All butter is unsalted.
All chocolate is 70% cocoa solids, unless stated.
All herbs are fresh, unless stated.
All milk and cream are full-fat no exceptions!!!
